Ingredients:-
White mushrooms- 150 gms(chopped)
Capsicums- 1 (chopped)
Peas- 1/2 cup
Onion- 1 big (paste)
Ginger- Garlic paste - 1tbsp
Tomato- 1 big pureed
Turmeric powder- 1/4 tsp
Red chilly powder-1tsp
Garam masala- 1tsp
kasuri methi- 1tsp
Coriander powder - 1tsp
Cashewnuts- 1/4 cup soaked and grinded to fine paste
Salt to taste
Oil- 2-3 tsp
Cumin seeds- 1tsp
Fennel seeds- 1tsp
Bay leaf - 1
Milk - 3/4 cup
Coriander - to garnish
Method:-
Clean, wash and slice the mushrooms and keep aside.Heat oil in a pan. Add bay leaf ,cumin seeds and fennel seeds. When cumin seeds splutter add the onions paste and saute them till onion paste turns golden brown.Then add ginger-garlic paste mix well and cook for a minute .Then add the chopped mushrooms , capsicum and peas and saute for sometime. Add the turmeric powder, red chilly powder ,garam masala ,coriander powder, kasuri methi and salt. Mix well . Then add the tomato puree and the cashew paste. Add 3/4 cup of water or milk and bring it to a boil.Mix well and simmer till the vegetables are tender and are coated well with the spices and gravy reaches correct consistency.Garnish with minced coriander leaves and fresh cream if you prefer.Serve hot with rotis/Chapatis/Naans/Parathas/Pulav.
