Indian Cottage cheese cooked in a saffron based gravy with fresh Indian spices.
Preparation Time : 10-15 minutes
Cooking Time : 15-20 minutes
Servings : 4
INGREDIENTS:
Cottage cheese (paneer) - 250 grams
Saffron (kesar)- 1/4 tsp
Ghee / Butter - 2 tbsp
Tomato puree - 1 Cup
Red chilli powder - 1 tsp
Sugar - 1/2 tsp
Salt to taste
Yogurt - 1 cup
Green cardamom powder - 1/4 tsp
Almonds ,toasted and flaked 5-6 to garnish
Fresh Cream - 2 tbsp
Kasuri Methi - 1/2 tsp
Coriander - to Garnish
METHOD:-
Soak saffron in one tablespoon of milk.Heat Butter/ghee in pan then add tomato puree, red chilli powder, sugar and salt. Sauté for a minute. Add yogurt. Cook and stir continuously for one minute. Add paneercubes and cook for two minutes. Sprinkle green cardamom powder,crushed kasuri methi and kesar soaked in water and stir. Then stir in fresh cream .Serve hot garnished with almond flakes and chopped coriander.
