Ingredients:-
* 1/2 cup All purpose flour
* 1/2 tsp baking powder
* 1/4 tsp salt
* 4 tbsps unsalted butter, at room temperature
* 1/3 cup sugar
* 1 large egg
* 1/2 tsp vanilla extract
* 1 1/2 cups shredded coconut
Method:-
1.Preheat the oven to 375°.
2.Line a cookie sheet with parchment paper.
3.In a medium bowl, whisk together the all purpose flour, baking powder and salt.
4.Combine butter and sugar to form a creamy mixture. Add the egg and vanilla extract. Then Add in the flour mixture Stir in the shredded coconut.Stir until all the ingredients are combined.Combine everything well to form a dough.
5.Now take a tiny portion of the dough(lemon sized). Make a small ball with it. Slightly flatten it. Repeat the same with rest of the dough. Place them on a baking tray or cookie sheet lined with baking paper.Leave 1 or 2 inches of space between them since cookies become double in size after baking.
6.Bake at 375 F until the edges are golden for 10 to 12 minutes.
7.Let cool on a cooling rack.Store in a air tight container.
