Ingredients:-
Samosas - 6
Green Chutney - 1/2 cup
Tamarind -Date Chutney -1 cup
Beaten Curds - 1 cup
Sev - 1/2 cup
Onion (finely Chopped) - 1 cup
Tomatoes (finely chopped) -1/2 cup
Coarinder(Chopped finely) to garnish
Chaat Masala - 3 tsps
Red Chilli powder - 3 tsps
Salt to taste
Chana Gravy:-
Chana/Chick Peas(boiled) - 1 cup
Cumin Seeds - 1/2 tsp
Asafoetida/hing -a pinch
Turmeric - 1/4 tsp
Red Chilli powder - 1 tsp
Ginger- Garlic paste - 1tsp
Green chillies - 2 (paste)
Onions -1/2 cup (paste)
Tomato -1 (pureed)
Chole masala - 1 tsp
Amchur powder - 1 tsp
Cumin powder - 1/ 2tsp
Coriander powder 1/2 tsp
Bay Leaf -1
Kasuri methi - 1 tsp
Salt to taste
Method For Chole / Chana gravy:-
Soak chana in water about 6-8hrsor overnight.
In a pressure cooker add Chole, about 4-5 cups of water, with little bit of salt .Cook Chole upto 3 whistles.
In Meanwhile grind onion,green chillies, ginger and garlic without adding water.
Make Puree of the tomatoes in food processor and keep it aside.
Heat 3 tsp Ghee /oil in a Kadai.
Add the cumin seeds – bay leaf and and fry for 1-2 seconds.
Add onion paste and fry till it becomes pink color then add the ginger-Garlic paste and Green chillies paste and fry in medium flame till ghee separates from it.
Then Add chilli powder, chole masala saute it for minute.
Now add the tomatoes puree and keep stirring.
After that add salt ,kasuri methi ,amchur powder .(Be careful while adding salt as already cooked chole with salt)
Add the Chole along with the water and cook till its gravy thickens.
Remove from fire and garnish with chopped coriander leaves and keep it aside.
For Curd/Yogurt Filling:-
Beat the curd/yogurt till it is smooth without any lumps. Now mix in roasted cumin powder, sugar and salt to
taste.
Method to Assemble Samosa Chaat:-
1) Place 2 samosas in each serving plates. Crush them a little.Pour a laddle full of chana gravy over it.
2) Now add 2 tablespoons of Date and Tamarind Chutney in such way it spreads all around. Add 1 tablespoon of green chutney and spiced yogurt.
3) Sprinkle 1 tablespoon of chopped onion ,tomatoes. Spinkle Chaat Masala and red chilli powder.
4) Garnish with chopped corinder and fine sev. Serve immediately.
